There is nothing more satisfying than a stack of fresh, fluffy, chocolatey pancakes, that are not only delicious, but packed with nourishing ingredients & are high in protein! These double chocolate protein vegan pancakes are such a must make for every fitness enthusiast, or simply a person, who likes to make their breakfasts a little bit more exciting than just an oatmeal or avocado toast.
I mean, I am drooling simply from looking at it! They're fluffy, rich in chocolate and have that amazing silky taste. I love to top them with some greek style yogurt, organic maple syrup, crunchy granola and of course, extra chocolate chips! Because there is never enough of them.
The ingredients:
(For approximately 1-2 portions)
60g oat flour
5g ground flax seeds
20g chocolate vegan protein powder
10g cocoa powder
pinch of salt
1/2 tsp baking powder + 1/2 tsp baking soda
170g soya milk (or more according to your consistency!)
dark chocolate chips of choice
Toppings: Greek style yogurt, granola of choice, organic maple syrup and chocolate chips.
Step 1. Prepare a medium sized bowl and combine all dry ingredients: oat flour, flax seeds, cocoa powder, chocolate protein powder, salt, baking soda + baking powder and chocolate chips. Mix well.
Step 2. Add in measured milk and combine well into a semi thick mixture. The mixture shouldn't be too runny nor too thick!
Step 3. Preheat your non stick pan with a little bit of vegan butter or coconut oil (some pans done even need oil).
Step 4. Add about 2 tbsps of the mixture on the pan and create a pancake shape, leave it fry on a medium heat until small bubbles occur on the top of the pancake and the edges start to firm. Then flip.
Step 5. Repeat with the whole mixture.
Step 6. Serve with toppings of choice and enjoy!
