Since the autumn weather is slowly but surely apporaching, it's the perfect time to start making some cozy treats to fully create the perfect comforting atmosphere. I'm so excited to share this healthy brownie recipe with you. I love it so so much and already made multiple batches at home. These healthy high protein chocolate pumpkin brownies are not only delicious, but also packed with nutritious ingredients, which makes them a perfect healthy snack for everyday basis.

Why To Use Pumpkin In Brownies?


Apart from that it's currently in season, pumpkin is a nutrition superstar! It's rich in vitamin A, providing over 200% of your daily requirement in just one serving and contains vitamin C and dietary fiber as well. Not only that, it actually creates the most silky and rich texture, which is my favorite thing about using pumpkin puree in my healthy high hrotein chocolate pumpkin brownie recipes.

What will you need to make these Healthy High Protein Chocolate Pumpkin Brownies?

The Ingredients:

(makes approximately 8 smaller pieces)

  • 120g pumpkin puree – Use canned or homemade.

  • 120g soya milk – I like to use unsweetened one.

  • 40g almond butter – Adds an amazing nutty flavour.

  • 30g cocoa powder – For a deep chocolate flavor.

  • 30g chocolate protein powder - I use Falcon vegan protein powder (discout code: FITMINGOKRIS)

  • 25g coconut sugar – Perfect natural sweetener.

  • 40g GF oat flour – I like to simply blend my GF oats.

  • 30g almond flour - For lighter texture

  • 30g+ chocolate chips - Use your favorite ones

  • 1/2 teaspoon baking powder – For a perfect light texute.

  • 1/2 teaspoon salt – Balances sweetness and flavors.


The Procedure:


Step 1. Start by preheating the oven to 180 degrees Celsius and lining your baking form with baking paper. I use (25x25cm).


Step 2. Prepare a big enough mixing bowl and combine all wet ingredients. (Pumpkin puree, soya milk, almond butter and salt. Mix well into a paste.


Step 3. Add in measured: cocoa powder, chocolate protein powder, coconut sugar, oat flour, baking powder and chocolate chips. Combine well.


Step 4. Transfer into your baking form and make for approximately 30-35 minutes.


Step 5. Once taking from the oven, I like to immediately sprinkle some more chocolate chips to the top for extra melt.


Serve once fully cooled down!


Storage tips:


To keep your healthy high protein chocolate pumpkin brownies fresh, store them in an airtight container at room temperature for up to three days. After the next day, I like to put them into a refrigerator, where they last for up to a week.
