High Protein Strawberry Chia Pudding

Delicious, highly nourishing high protein strawberry chia pudding. Ideal for meal preparetion the day ahead, or as a quick breakfast.

Here is only a two groups of people I'd say. The ones who LOVE chia pudding, and those who can't handle it. For a long long time, I was definitely in the second group. But only because I wasn't making it exciting & delicious! Let's be honest, chia seeds mixed with plant milk are just not it..

This chia pudding is my new obsession!

As I said before, I truly wasn't a fan of chia puddings at all. But I kept seeing it online and how people seemed to love it? So I told myself, that it's time for me to crack this chia pudding code and create a version I would go back to on a regular basis. And voila! After many failed attempts, here is the perfected chia pudding I am sure, you will love. I filmed the procedure of making this chia pudding, feel free to check it out here.


High Protein Strawberry Chia Pudding

High Protein Strawberry Chia Pudding

The ingredients:


This is a single serve recipe, so if you're planning to meal prep this, feel free to double or triple the ingredients.

  • tbsp chia seeds

  • 130ml plant based milk (I used oat milk)

  • 20g vanilla vegan protein powder

  • 40g plant based yogurt (the best is greek style, plain)

  • gluten free granola of choice

  • approximately 6 mashed strawberries

  • strawberry powder ofr dusting (not neccesary)

The prodecure:


Step 1. In a small bowl, combine chia seeds with plant milk and protein powder, mix very well until no lumps.


Step 2. On a small plate or a cutting board, mash your strawberries using a fork.


Step 3. Layer into ideally a glass jar starting with granola, then plant based yogurt, chia pudding mixture and mashed strawberries. Repeat until all ingredients are used.


Step 4. I like to top mine with strawberry powder, but it's not neccesary.


If you're preparing this for the days ahead, I would recommend storing in a glass jars and adding your granola the day of serving (if you prefer crunchy bits). Do not store for longer than 3 days.
