Ingredients you'll need:

  • Oats : Ensure they provide a good source of whole grain and fiber.

  • Banana: Adds extra moisture and natural sweetness.

  • Almond butter: Adds extra healthy fats and delicious nutty flavour.

  • Coconut oil: Adds moist and creates amazing crunchy texture.

  • Cranberries: For extra sour flavour

  • Chocolate chips: A little burst of chocolate is always a good idea

  • Cinnamon: For extra comforting flavour

  • Protein powder : Opt for your favorite flavor to add that protein boost.

  • Flax seeds : Excellent for providing structure to the flapjacks.

  • Soy Milk : To provide moisture and richness to the mixture.

  • Maple syrup : A natural sweetener to give that delightful taste.


  • Optional extras : Feel free to include nuts, seeds, or dried fruits for added texture and flavor.

The Ingredients:

  • 1 medium banana (mashed)

  • 150g Gluten free old fashioned oats

  • 20g maple syrup

  • 30g almond butter

  • 20g vanilla vegan protein powder (Linking the one I'm using)

  • 15g melted coconut oil

  • 10g ground flax seeds

  • 1 tsp cinnamon

  • 15g chocolate chips

  • 20g cranberries

  • 1/3 tsp salt


The Procedure:

Step 1. Preheat the oven to 170 degrees Celsius.


Step 2. Prepare a big enough mixing bowl & mix together: mashed banana, maple syrup, almond butter, melted coconut oil, salt & protein powder. Combine into a paste.


Step 3. Add in oats, flax seeds, cinnamon, chocolate chips and cranberries. Combine well.


Step 4. Prepare a baking form (I am using a loaf shape), line with baking paper. Add in the flapjack mixture, press to the bottom of the form, make sure it’s REALLY pressed.


Step 5. Bake for approximately 15-20 minutes. Until golden.


Step 6. Let it fully cool down after baking before slicing!
