Single Serve Caramel Protein Cookie

Are you looking for a small batch, ideally a single serve cookie recipe, that is higher in protein, simple to make and still delicious? Then you absolutely won a jackpot today, because this single serve caramel cookie is just it. It's crunchy on the inside, soft and chewy on the inside. The melted caramel pieces complete this cookie to perfection and I guarantee you, that once you make it, it won't be the last time you do so.

Yup, there she is! Full of good ingredients, flavours, textures, nutrients and protein! One thing I never like about cookie recipes is the fact, that you always have to make the whole bunch. Sooo, that led me to creating a single serve recipe that is the perfect amount in order to safisfy my sweet tooth and not having to spend so much time making it. As this cookie takes about 20 minutes all together to make!
The ingredients:
2 tbsp date paste
1 tbsp almond butter
1/2 tbsp melted vegan butter
pinch of salt
2 tbsp rice flour
1 tbsp vanilla vegan protein powder (10% off with fitmingokris)
1/4 tsp baking powder
chocolate chips of choice & vegan caramel chunks (amount purely up to you)
The procedure:
Step 1. Preheat the oven to 175 degrees celsius.
Step 2. Take a medium sized bowl and combine: date paste, almond butter, vegan butter and salt into a thick paste.
Step 3. Add in rice flour, vanilla protein powder, baking powder and chocolate chips together with caramel chunks.
Step 4. Combine very well. Create a cookie shape off of the dough as this dough doesn't melt as regular cookie dough.
Step 5.Place on a baking tray lined with baking paper, or alternatively, simmer some oil or butter underneath the cookie.
Step 6. Bake for approximately 11-13 minutes.
