Hello everybody! Happy Halloween- if you're diving into this recipe today! This delicious recipe is for everybody who is into fitness or simply loves healthy living, but has a big sweet tooth like myself! These Spooky Oatmeal Pecan Bites are so quick to prepare, so if you need a last minute spooky treat, these are the perfect choice. They're packed with protein, healthy fats and of course, completed with a nice layer of dark chocolate.


These bites are soft and chewy on the inside, but have delightful crunchy edges on the outside. To make them a little Halloween themed, they’re decorated with cute ghosts made from a vegan white chocolate.

Why You’ll Love These Spooky Oatmeal Pecan Bites


First, they are suuper easy to make, protein packed and made off of super nourishing ingredients! The combination of warm cinnamon and toasted pecans make them the perfect autumn treat, that will bring extra dosage of coziness to your day.


Ingredients You’ll Need:


(Makes approximately 8 small bites)


  • 90g apple sauce

  • 35g organic maple syrup

  • 20g almond butter

  • 15g melted coconut oil

  • 10g ground flax seeds

  • 1 tsp ground cinnamon

  • 25g organic vanilla vegan protein powder (linked here / DC:FITMINGOKRIS)

  • 140g old fashioned GF oats

  • 10g corn flakes

  • pinch of salt


For chocolate layer:

  • 75% dark chocolate + 1 tsp coconut oil

  • Vegan white chocolate + 1 tsp coconut oil



The procedure:


Step 1. Start with creating little ghosts for decoration by meltim your white chocolate with coconut oil. I like to melt mine in a microwave (1 minute).


Step 2. Prepare a sheet of baking paper and a wooden toothpick/spoon and simply draw a little ghosts using your toothpick or a spoon, place in a freezer for at least 10 minutes to set.


Step 3. Now preheat your oven to 180 degrees celsius and prepare, ideally, a silicone form.


Step 4. In a big mixing bowl combine all wet ingredients: apple sauce, maple syrup, almond butter, coconut oil and mix into a thick paste.


Step 5. Add in: cinnamon, salt and protein powder. Mix again very well.


Step 6. Add the rest of the ingredients: old fashioned oats, corn flakes, chopped pecans and flax seeds. Combine well.


Step 7. Press equally divided mixture into your silicone forms, press to the bottom by using a spoon and bake for approximately 25 minutes.


Step 8. Wait until fully cooled down before taking them out of the form to prevent breakage.


Step 9. Meanwhile, melt your dark chocolate with a spoon of coconut oil and spread over the tops of each cooled bite.


Step 10. Last, take your prepared ghosts out of the freezer and add one to each of your mini bite ( I like to use a knife for this in order to carefully transfer them from the baking paper onto the bite). Place in the fridge for at least 15 minutes to set.

Storing Your Spooky Oatmeal Pecan Bites


Ideally, keep them in an airtight container in the fridge for up to one week. You can also freeze them for up to two months. When you want to enjoy one, just take it out of the freezer and let it defrost for a few minutes.
