The Fluffiest Homemade Vegan Bagels

It took me so long to perfect my homemade bagels and I'm so excited to finally share the recipe with you! Of course, store bought bagels are great, BUT, there’s nothing quite like the smell of freshly baked homemade bagels, knowing, they're made out of simple ingredients and most importantly, with love.

Ingredients You'll Need To Make The Fluffiest Homemade Vegan Bagels
(Makes approximately 8 bagels)
520g of all-purpose flour
2 tbsp brown sugar
1 1/2 tsp himalayan salt
2 1/2 tsp instant yeast
350ml warm water
Toppings of your choice (I used a mix of sesame seeds and poppy seeds with a pinch of salt)
The Procedure:
Step 1. Start by mixing the warm water with sugar and instant yeast in a large bowl. Allow this mixture to sit for about 5-10 minutes until it becomes frothy. Never rush this step as it ensures the yeast activates properly, which then gives your bagels light and airy texture.
Step 2. Once the mixture is frothy, add salt and mix well.
Step 3. Then add in the flour (and get ready to get messy). I like to use my hands for this. Mix the flour with your yeast mix properly, until a dough starts to form.
Step 4. Then transfer your dough on a clean, slightly dusted with flour kitchen surface and knead the dough for about 10 minutes, until it is smooth and elastic.
Step 5. Tranfer your dough into a large bowl, cover with a clean teatowel and place in a slightly warm place, I usually put it underneath a duvet. Let it rise for approximately 1 hour and a half.
Step 6. Once your dough has risen, transfer it onto a floured surface, divide into 8 similar sized pieces.
Step 7. From each piece of the dough, create a small balls, which then poke a hole in the center and gently stretch it in order to create the classic bagel shape. Repeat with all pieces of the dough, shaped bagels place onto a dusted surface.
Step 8. Bring a large pot of water to boiling and add a pinch of salt.
Step 9. Carefully drop in your shaped bagels, boiling them for about 1 minutes on each side. This is the essential step that gives your bagels that nice and chewy texture.
Step 10. Preheat your oven to 220°C and prepare a baking tray lined with baking paper.
Step 11. While the bagels are still wet from boiling, I like to spread over a little bit of melted butter before sprinkling them with sesame and poppy seeds.
Step 12. Place them on your baking tray lined with baking paper. Bake for 20-25 minutes, or until they turn golden brown.
