The Ultimate Healthy Autumn Treat: Mini Protein Apple Pies!

The ingredients You'll Need:

For the dough:

• 40g of gluten free fine oats/ oat flour

• 1 big tablespoon of almond butter

• 1 tablespoon of melted vegan butter

• 2 tablespoon of coconut sugar

• 43g of soy milk

• pinch of salt


For sautéed apples:

  • 1 medium apple

  • 2-4 tablespoons of maple syrup

  • 1 teaspoon of cinnamon

  • 1/2 teaspoon of corn starch

  • 70-100ml water (or more to add during sautéing if needed)

Instructions:


Step 1: Prepare a big enough mixing bowl and combine all ingredients for the dough. Create a small, similar sized balls and press to the bottom of a silicone muffin form.


Step 2: Bake on 180 degrees Celsius for approximately 10-12 minutes.


Step 3: Meanwhile, start sautéing the apples by chopping them into a mini cubes, adding them onto a preheated frying pan (or a pot) with water and leave it bubble for about 15 minutes while occasionally stirring.


Step 4: Then lower the heat, in a small bowl, combine: potato starch with water, cinnamon and maple syrup, pour over the apples, mix properly and cook for 3 more minutes.


Step 5: Once the pie base is baked, leave it cool down for 10 minutes, then remove from silicone forms and fill each of them with sautéed apples.


Step 6: Let them sit for approximately 5-10 inutes before eating.
