Calling all cookie & air fryer lovers! These White Chocolate & Pistachio Protein Cookies made under 15 minutes in an air fryer will surely be your new obssesion! These cookies are not only quick to make, but they're also super crispy, sweet, and packed with protein goodness. What's not to love?
Ingredients You'll Need:
(Makes approximately 6 cookies)
1/2 tbsp ground flax seeds
2 tbsp water
20g coconut oil
20g maple syrup / honey
45g almond butter
40g almond flour
30g vanilla vegan protein powder (The tastiest vegan protein linked here. (Discount code: FITMINGOKRIS)
pinch of salt
10g chopped pistachios
10g chopped vegan white chocolate
The Procedure:
Step 1. Prepare a big enough mixing bowl and combine all wet ingredients.
Step 2. Add in all dry ingredients (leave out 1/2 of chopped pistachios & white chocolate) and mix well.
Step 3. Create similar sized balls, makes approximately 6, smash each into a cookie shape, press in leftover pistachios and chocolate.
Step 4. Place in the air fryer and bake on 180 degrees Celsius for approximately 10-12 minutes.

Extra Tips:
Feel free to swap white chocolate with dark or milk chocolate for different flavor if you prefer.
Add a sprinkle of sea salt on top before air frying for a sweet and salty combination & it helps to bring out the flavours more!
Store any leftovers in an airtight container.
