Why You Should Make These White Chocolate Protein Bounty Bars?


These bars are a deliciousl tweak of the iconic Bounty bars that we all know and love! These are packed with the smoothness of white chocolate, a little chewiness of shredded coconut, and a protein-rich filling. They're perfect for mealprep as they last a long time when kept in the fridge.


Ingredients You'll Need


This amount makes approximately 12 pieces


For the Coconut Filling:

  • 1 cup shredded coconut

  • 1/8 cup of vegan collagen (can be left out)

  • 2 big heaped tbsp or 4 tbsp of coconut cream (the thick part from canned coconut milk)

  • 2 tablespoons maple syrup or agave

  • 1 scoop of vanilla protein powder

  • pinchh of salt


  • For the White Chocolate Coating:

- approximately 60g of dairy-free white chocolate chips

- 1 teaspoon coconut oil


The procedure:


Step 1. In a mixing bowl, combine the shredded coconut, salt, collagen and protein powder. Mix properly.


Step 2. Add in 2 HEAPED tablespoons of coconut cream, maple syrup and mix very well. If you feel like the mixture is too dry, add more coconut cream.


Step 3. Line a small baking tray or a plate with baking paper. Use your hands to create small "bounty like" shapes. Repeat until you use all of the dough and place in the freezer for 15 mins.


Step 4. In the meantime, melt your dairy-free (or regular if you prefer) white chocolate chips. You can use a microwave-safe bowl or a water bath. Microwave with a teaspoon or two for approximately 1-2 minutes. The chocolate needs to be quite runny in order to coat your bounty bites easily.


Step 5. Dip each into the melted white chocolate. Let any excess chocolate to drip off and return them to the baking paper-lined tray.


Step 6. Place the tray in the fridge for an additional 5 minutes, but usually the chocolate sets straignt away. I like to sprinkle mine with strawberry dust, but you can use crushed nuts or chopped chocolate if you don't have any.

Storing Tips

Keep them in an airtight container in the fridge for up to a week, or in the freezer for up to three months. If you place them in the freezer, just put a baking paper between each layers to prevent them from sticking. Enjoy!!
